We love bringing things full circle and connecting our talented farmers, fisherman, ranchers, winemakers, brewers, distillers, craftspeople, and artisans to our daily offerings. Our partners supply us with amazing products, and in turn, our enormously skilled and dedicated team delivers them from our kitchen to your table. Erin is a true local, raised skiing in the mountains of Whistler, she learned her way around the kitchen at a young age, and later picked up her fine dining culinary skills working under her father at The Edgewater Lodge in Whistler. Erin loves to eat! She was drawn to the Pemberton Valley by the selection of farm fresh produce and local ingredients. Erin enjoys the sense of community found in Pemberton and at Mile One, where she leads all aspects of culinary operations including creative menu development, retail purchasing, and maintaining our craft beer list. Erin is inspired by international flavours and the use of local seasonal products. This approach, combined with a natural foodie culinary talent allows Erin to deliver great experiences to our Mile One guests!

 The "Mile One Guy" is what Craig has been known to have been called around town. A transplanted Maritimer, Craig brings his gift of the gab to our space. He loves a good conversation with our locals and visitors alike, especially if it revolves around our great outdoors and the ski and bike trails that Craig is passionate about... or better yet, a bike trail that he has built! Craig has a deep love of great food, and although we don't let him cook at Mile One, we hear he's pretty skilled around the kitchen at home. Craig is actively involved in our beer program and has a great ability to match any of our 35+ BC microbrews with your personal tastes and menu choices. As a member of our Pemberton Fire Department, Craig has set down solid BC roots! Whether it's trying to get you a table in the restaurant, showing off the huge wall map of our backcountry, or talking about his new fat bike or the skis he's just built, he is sure to keep you genuinely entertained!

 

Randy Jones - Founder

Randy Jones is the original founder of Mile One Eating House located in British Columbia's stunning Pemberton Valley. With one eye on the focus of Mile One Eating House's motto, "we take comfort food seriously", the restaurant team is passionate about showcasing great BC Food & Beverage products.

Randy's culinary career began at the Dubrulle French Culinary School in Vancouver and then on to an apprenticeship with Fairmont Hotels & Resorts to acquire his Red Seal. Randy has worked within kitchens from Tofino's Wild Pacific Coast to Whistler's High Country, the Canadian Rockies to Downtown Vancouver and off into the South Chilcotin!

His passion for the bounty of BC has evolved from these amazing places, with the casual offering of Mile One Eating House reflecting this spirit!

 

Cindy Yu - Founder

Born in Hong Kong but brought up in Vancouver, Cindy began her career in the Food and Beverage industry at Fairmont Hotels & Resorts properties. This relationship lasted over 20 years! First at Hotel Vancouver, which exposed her to the large scale world of banquet events, and later to a fine dining service style in one of the hotel's restaurants, 900West.  The Chateau Whistler Resort was Cindy's next post where she continued her career in an upper scale dining environment in The Wildflower Restaurant and The Grill Room. Cindy and Randy chose to make their home base rooted in Pemberton in 2006, and by 2010 they were working on the Mile One Eating House Project. Cindy has assumed a multi-functional role at Mile One. Her front of house experience influences the day to day service operations, however her ability to multi-task has her supporting the kitchen team as well.  As many business owners know, you just need to get it done! Consequently, Cindy jumps in to do food prep and dishwashing and everything in between. Hospitality comes second nature to her, and combined with Randy's culinary influence, Mile One Eating House is a recipe for success.
